Im a little mystified by the folks saying they had to reduce the sugar or itd be too sweet because this cake seems way less sweet than most others, but to each his/her own mine was barely sweet with the called-for amount of sugar and the glaze together. Sugar contributes moisture, so with less, it can get more dry or brittle. Or perhaps a square baking pan is the way to go here with coconut oil instead of olive oil?!
